Mambo Italiano!

So last weekend Hubs and I decided we needed a date night in. He was to pick up the wine, I was to handle food and Netflix would provide our movie night marathon. Since I didn't really feel like cooking I decided on an antipasto platter that we could also snack on all night. It was so easy, yummy and came out looking so pretty that I had to share!

Some of the things we had on hand and some of it I picked up at our local grocery store. Although I'm pretty sure there is no possible way to mess this up (just add what you like!) I went with:

  • Baby mozzarella balls
  • Parmesan cheese
  • Prosciutto
  • Genoa salami slices
  • Champagne tomato
  • Pepperoncini peppers (whole)
  • Grapes
  • Marys Gone Crakers (GF!)
  • Italian bread slices
  • Hummus
  • Cucumber
  • Red bell pepper
  • Olive oil dipping sauce
  • Calamata olives

I started by putting the mozzarella, olives, hummus and crackers in small snack bowls on my platter. Then sliced my cucumber and red pepper and added them with the tomato, grapes and peppers. I cut the parmesan into chunks and added it with the deli meats that I rolled or folded. For olive oil dipping sauce I minced 2 cloves of garlic, added fresh basil, grated some parmesan cheese and olive oil. So good with the bread!

PS We spent the entire night watching 'The Following' on Netflix - ADDICTED!
