Sunshine Whole Juice

Lately, I have been having this green juice every single morning. It really makes me feel good to start out my day with good intentions (and a full serving of veggies). I use my Blendtec, not a traditional juicer, but it pulverizes it into a 'whole juice' - just like juice, but with fiber (and we all know what fiber does). Yay!

Sunshine Whole Juice: 1 Serving

  • 2 large handfuls baby spinach
  • 1 TBSP ground flax
  • 1 TBSP chia seed
  • Cinnamon (generous sprinkle)
  • Juice of 1 lemon
  • 2 cups ice
  • 1 cup water (or almond milk)

130 cals | 5g fat | 15g carb | 7g protein | 9g fiber | 2.5g sugar - with water

I add these ingredients to my Blendtec container in the order listed above and hit the 'Whole Juice' button and voila - its done in about 1 minute. With any other blender I would let this run for at least one minute and then check the consistency. I make these the night before, in batches of 2, and store in the fridge until I am ready to drink in large mason jars. I tried making batches of 3 and 4 but the ingredients are really freshest/tastiest for about 2 days.
