Southern Comfort: Breakfast Casserole

This weekend, my sister-in-law and I decided we would make a breakfast casserole for everyone the morning after the pool party. We found this recipe and thought it would be something that could be made with a hangover, in a hurry and feed a lot of people! (And was GF for the Hubs!)




Breakfast Bake (serves 8-10)

  • 1 dozen eggs
  • 1-2 lbs. of frozen hash browns (recipe called for 2, we used 1)
  • 1 lb. breakfast sausage
  • 1 cup milk
  • Shredded cheese
  • Optional toppings: onions, tomato, bacon, chives, etc.

1. Preheat oven to 350 and grease/spray 9" x 13" baking pan. 
2. Start browning your sausage. 
3. In large bowl, beat eggs and milk. 
3. Spread out hash browns in baking dish. Cover with egg mixture and gently mix. 
4. Top egg/hash brown mixture with sausage and cover with cheese. We added chopped tomatoes to half of this casserole. 
5. Bake casserole in oven for 30-45 minutes, until the cheese is bubbly and brown.


This was SO easy to make and everyone loved it. Could even be prepped the night before, stored in the refrigerator and taken out in the morning to bake.
