How To Roast Squash

I love roasted anything. Tomatoes, potatoes, squash, zucchini, chicken, sweet potato... literally anything that you can slice up and put on a baking sheet. Partly because I love all things crispy and partly because it is so freakin' easy!



You Need:

  • 2 pounds baby squash, washed and dried
  • 2 tbs olive oil
  • salt & pepper

Instructions:
  • Preheat oven to 400 degrees
  • Slice up evenly thick portions of your squash
  • In a large mixing bowl, combine squash with evoo, salt and pepper. 
  • Place evenly on foil-lined baking sheet and put into oven for 25-45 minutes, depending on your oven and how "done" you like your veggies. I love mine with crispy black edges, some people are not so into that, so check your veggies at 25 minutes and flip them if you like (I never do!).

SO EASY! This method applies to any veggie. If you have not roasted something yourself - you just have to! The flavors that come out are too good not to try it! Do it. Now. Seriously. You're welcome.
