Cashew Queso, Ole! {Dairy free!}

Cheese, cheese, cheese, down into my belly. I love cheese! Except then I remember that I hate cheese. I hate cheese because it makes my nose and skin congested. I hate cheese because it makes my stomach hurt. I hate cheese because it is highly processed and hard to digest. Damn you, delicious melty cheese!

So, naturally, when I saw this dairy-free 'queso' post on The Detoxinista I knew I had to try it out immediately and decided I would make it for the Super Bowl party we were going to. If I was going to try this out on an audience, I thought a drunk and hungry one would be best!




Cashew Queso: (original recipe from The Detoxinista)

1 Cup raw cashews, soaked 4+ hours (or overnight)
1/4 Cup water
1 teaspoon sea salt
Juice of half a lemon
3 Tablespoons nutritional yeast
1/8 teaspoon turmeric
14 oz. can fire roasted, diced tomatoes

1. Put your raw cashews in a container and cover with water. Put on lid (I used tupperware) and let soak in refrigerator overnight. 
2. Drain your cashews when you're ready to start and add to high-speed blender (or food processor) with the first 6 ingredients and blend until smooth. 
3. Stir in tomatoes and heat on low in small crockpot or microwave (go slowly and stir every 30 seconds).
4. Voila! Healthy queso! (You're welcome.) 

To be super honest with you Hubs was not super into my "queso" but I thought it was convincingly tasty! I really think that this recipe may be best as a sauce to cover a chicken breast rather than a dip for chips because of the consistency - and hey - that's a healthier option, too!

P.S. Who else watched the super bowl and was super excited for a Seahawks win?! OHHH YEAAH!
